Use NHS Egg Albumen to replace fresh egg white in recipes.For each egg white, stir together 2 level teaspoons (5g) of Egg Albumen plus 2 tablespoons (35g) of warm water. Allow to stand for 2 minutes to ensure powder is fully hydrated then stir again. Can be added as a powder to baking mixes, sauces and drinks to help boost protein and improve texture.
